A large US company is looking for proposals for an innovative material that can completely coat a hot and viscous food product. After cooling, the applied coating product is easily peeled from the solidified food.
They are interested in supplier agreement, licensing, proof of concept leading to scale up to manufacturing, joint development, contract research.
Coatings are generally based on hydrophobic materials made from hydrocarbons. Specific grades are used for food applications where they offer a high moisture barrier and excellent protection against fungal contamination. The coating is mostly applied on cold (2-8°C) food products. The typical range of end-use temperature is 2-30°C and at these temperatures the coating can be easily torn open to extract the food.
The company would like to apply such coatings on hot food products in order to minimize the risk of bio-contamination.
Possible approaches might include but are not limited to:
- Food-safe additives able to alter the rheological properties of malleable materials
- Novel hydrophobic materials
- Amorphous or crystalline materials
- Materials derived from bio-resources.
The following approaches are not of interest:
- Coating materials for hot dipping of the food
- Thermoformed foil or film for hard half-shells
- Hydrophilic materials since these do not provide a moisture barrier.
Technical Specifications / Specific technical requirements:
The successful product will:
- Be processed in a temperature range of 70 100°C where the food product is a viscous liquid (1 20 Pa.s)
- Be able to uniformly coat the viscous food in a short time process (10 to 100 items per minutes) like:
Injection of the food product with the coating material in a mould
Co-extrusion of both food and coating
Blowing of a pre-form and subsequent food injection
- Be in contact with the food product but not intermingle
- Be solid yet soft between 2 60 °C
- Be easily torn open for extraction of the food product
- Offer a complete barrier to moisture to prevent weight loss and bio-contamination
- Be approved for food contact use
- Be cost effective (less than 5¬/kg).
